- San Marzano tomatoes (real DOP)
- Guanciale (not pancetta, actual guanciale)
- Pecorino Romano (imported, not domestic)
- 00 flour
- Calabrian chilis
Every Italian importer wants $500+ minimums. I’m a 24-seat place!
Has anyone found sources for authentic Italian ingredients in reasonable quantities?
I refuse to use sysco’s “Italian” section. That’s not Italian, that’s italian-ish.
