Help: need authentic Italian ingredients without buying a pallet

Opening an Italian spot in March. Need:

  • San Marzano tomatoes (real DOP)
  • Guanciale (not pancetta, actual guanciale)
  • Pecorino Romano (imported, not domestic)
  • 00 flour
  • Calabrian chilis

Every Italian importer wants $500+ minimums. I’m a 24-seat place!

Has anyone found sources for authentic Italian ingredients in reasonable quantities?

I refuse to use sysco’s “Italian” section. That’s not Italian, that’s italian-ish.

for guanciale specifically, check if there’s a local Italian deli that will sell wholesale. many will for restaurants
