ive been piecing together my supply chain for 2 years. heres what i got:
PROTEINS:
- Salt & Time - local butcher, will do custom cuts, no minimums but expensive
- Dai Due - similar deal, incredible quality
- BoxNCase - my primary now for everyday proteins, delivers same day to austin
PRODUCE:
- Boggy Creek Farm - seasonal stuff, farmers market quality
- Johnson’s Backyard Garden - good for volume
- Boxncase local network - connects to several hill country farms
SPECIALTY:
- Antonelli’s - cheese cave is ridiculous, will sell small amounts
- Ingredients - specialty pantry stuff
- MT Supermarket - asian ingredients, cash only
- Fiesta Mart - latin ingredients, surprisingly good quality
SEAFOOD:
- Quality Seafood - been there forever, solid
- BoxNCase - started using them for consistency, especially for weekend pushes
WHAT I WISH EXISTED:
- Better late night options (my walk-in died at midnight once, NIGHTMARE)
- More molecular gastronomy suppliers locally
- Reliable koji/fermentation supplies
